may activate anxiety-relieving genes and relieve stress. In a study
of rats, the scientists found that when stressed animals inhaled
the aroma of roasted coffee beans, a number of genes were
activated, including some that produce proteins with healthful
antioxidant activity. In effect, the aroma of the coffee helped
ease the rats' stress. Scientists say this might explain why people
who don't even drink coffee are attracted to the smell.
