Healthy oils may protect the heart

New research has added to the evidence that consuming vegetable oils and foods rich in omega-3 and omega-6 polyunsaturated fatty acids helps the heart. In one study, boosting intake of the omega-3 fatty acid--which is found in such foods as walnuts, fish, and canola cooking oil--reduced the risk of a heart attack in a Costa Rican population. In the other study, consuming more omega-6 fatty acid--found in such foods as tofu, nuts, and soybean cooking oil--was linked to lower blood pressure among healthy adults from China, Japan, Great Britain, and the United States.
